Serves 3 as a main, more as a side salad
Ingredients:
1 cup dried bulgar (aka cracked wheat) - this will expand to 2 cups after absorption
2 cups vegetable broth
1/2 a brown onion, finely chopped
2 cloves garlic, minced
3 cups of fresh parsley (flat or curly), finely chopped
1 medium tomato, chopped
3 tbs olive oil (optional, you can just use an extra 2tbsp of lemon juice if you don't want to use oil)
2 tbs freshly squeezed lemon juice
Himalayan salt & freshly cracked black pepper, to taste
Place your bulgar with the vegetable broth in a large bowl, stir once and cover. Leave for around 20-30 minutes or until the bulgar has absorbed the broth. After 30 minutes if it hasn't been all absorbed simply drain the excess. Add all other ingredients together in the bowl and mix thoroughly. Leave for 30 min for the flavors to intensify then serve:) Yum!
